Willow Creek Vineyard Chardonnay

Rare Hare Willow Creek Vineyard Chardonnay is sourced from the cool climate, fastidiously hand tended Willow Creek Vineyard on the Mornington Peninsula.

All the grapes are handpicked in small batches to ensure each parcel has reached the ideal structure and flavour profile. This approach lends itself to minimal intervention the winery.

The fruit is whole bunch pressed to minimize phenolic extraction. The juice ferments in French oak barrels, around 20% new. Most of the wine sees malolactic fermentation to bring the high natural acidity into balance.

The wine matures for nearly a year on lees with monthly stirring and is bottled just before the following vintage begins.

Pale golden yellow, Rare Hare Willow Creek Vineyard Chardonnay balances distinct nutty, creamy characters with fresh citrus acidity. Cellaring potential is 10 years.
